    Mexican Chilli Bean Soup

I’ve recently tried a supermarket’s own tinned Mexican Chilli Bean Soup and my first thought was “I can make this better”. Actually, I’ve tried a couple from different supermarkets. Some containing chicken too. They were OK but I was more shocked when I read the ingredients on the tins. The amount of salt is shocking and one even contained hydrogenated fats….. Why?! Why does soup contain man made fat! There’s just no need for it. And a good soup shouldn’t need ridiculous amounts of salt either. I prefer a thicker soup to a watery, stock based one so my recipe for Mexican Bean Soup is done in two parts. The…

    Baked Sweet Potato Onion Bhajis

We love a curry in our house and these Baked Sweet Potato Onion Bhajis are the perfect side dish! My family love my Easy Chicken Curry which is packed full of healthy veggies. We do tend to turn curry night into a feast though! Even me being gluten free doesn’t stop us having all of the side dishes. These Baked Sweet Potato Onion Bhajis are absolutely delicious. Because they’re baked it makes them healthier than your standard Bhajis. And you can get extra vegetables into the kids without them realising! Ingredients (Makes 6-8+ depending on the size) 1 Medium Sized Sweet Potato 2 Onions 1 Tsp Curry Powder 1 Tsp…

    Chicken Mayonnaise Pasta Salad

Summer is nearly upon us again… Well it should be but the weather has still been a bit naff! I’m sure this time last year I had the start of a golden tan. But anyway, summer means salads for me. There’s nothing better than nice crisp vegetables when it’s warm out. My only issue is, salad alone just doesn’t fill me up. Which is why I love this Chicken Mayonnaise Pasta Salad. It’s a good mix of stodgy carbs and tasty veggies. I tend to have it with some crispy lettuce leaves too. Mine is made with gluten free pasta but you can make it with normal stuff. Due to…

Chicken, Bacon and Leek Pot Pie

Pie is ultimate comfort food in my eyes. There’s just something about it that reminds me of wintery, cold evenings. Since I began eating healthy 3 years ago, I’ve not often had pie as having pastry is just unheard of! How many calories?! And then, since finding out I have an issue with Gluten last year, I’ve had 1 pie. And I will say, it was the worst thing I’ve ever eaten. Because of this dreadful experience and sticking with healthy eating, I decided to make my own recipe. This chicken, bacon and leek pot pie seemed like a good one! Full of plenty of veggies and actually quite easy…

Roasted Sweet Red Pepper And Tomato Risotto

I love a rice dish! They’re perfect for any time of the year and always guaranteed to fill a hungry tummy. This particular recipe is vegan, gluten free and dairy free but doesn’t compromise on taste whatsoever! I’m not even vegetarian but I would like to try a few more veggie/vegan recipes this year. I really enjoy a good veg based meal so there’s no reason to have meat every day. It also reduces calories so win win really! Risotto is one of my favourite rice dishes and speaking of meat, you can find my chicken and bacon risotto recipe here. Ingredients (Serves a family of 4) 2 large sweet,…

Calorie Counting Scales Review – Stellar Kitchenware

Calorie counting scales sound like a dream! But are they worth their weight? (See what I did there?) I got given the opportunity to find out! I stopped following a particular diet plan over 6 months ago now. You can read why HERE. I’ve put on a little bit of weight again but I’m not overly bothered. I do manage to maintain and lose a bit of weight when I want to, but I do it through calorie counting. There’s a lot more flexibility with calorie counting and it just makes sense! Don’t get me wrong, the diet plan worked but I don’t think it’s maintainable in the long run.…

    Healthier Lemon and Coriander Hummus

It’s probably the wrong time of the year to be making a new hummus recipe but I had some while I was away at the weekend and got a real taste for it again. I was on holiday though so keeping an eye on the calories I was consuming had gone out the window. This meant, I needed to make a lower calorie, low fat version of course! I can guarantee I will keep tweaking this recipe as I always do. I thought I’d share it though as this makes such a tasty lunch or snack! You will need a blender of some description to make this. Ingredients 1 Tin…

    Fajita Chicken – 2 Ways

We have a thing for Mexican in our house. Well, apart from the toddler but he’s in the “I don’t like it!” stage. We don’t tend to have roasts on a Sunday, we either have Mexican or a curry. It’s kind of a picky dinner night where things get put in the table and you help yourself. Standard wraps in the UK are made from wheat flour which is annoying for me. Proper Mexican tortilla’s are made from corn which makes them naturally Gluten Free! Can you tell it annoys me slightly? Hehe! So anyway, because of this I couldn’t be bothered to buy GF wraps. I decided I would…

Skinny Unicorn – Weightloss Coffee Review

There’s always mixed reviews on “weightloss” and “detox” beverages and I do truly believe you have to be careful when you decide to try one. They are all different and some do have unwanted side effects. I’ve tried a detox tea before which it on really well with so when Skinny Unicorn asked me to try their coffee I couldn’t say no! I love coffee so I knew I wouldn’t struggle to use this! I did check over the ingredients first and there’s nothing in there I can’t read, which is always a good sign. The thing that stood out to me the most was that it had coconut in…

    Creamy Chicken Pasta

I normally try making recipes at least twice before I post them on my blog but I had quite a few requests on all my social media accounts for this Creamy Chicken Pasta. It was quite simple to make and it came out really well so there’s no point holding out to make it a second time. Everyone in my house thouroughly enjoyed this and it’s definitely going to be something I make regularly as it’s not much effort to make which is right up my street these days! This does require a slow cooker but it’s not a recipe you can leave all day as it doesn’t take long…
