    Tomato and Chorizo Pasta

This was such a tasty dinner! Even the toddler demolished a bowl full and he’s in that horrible picky stage where he will only eat breaded chicken and pasta and screams if there’s any vegetable lumps. He won’t even eat chips! So this has the toddler stamp of approval so it must be pretty good.

    Mexican Rice

This is something I used to cook way before I started “dieting” and now it seems every time I have it on the menu we end up with a takeaway! Tonight, I finally managed to cook it again and I forgot how good it is for a simple, 1 pan dish. It’s a great way of using up wrinkly veg too as you can chuck whatever you fancy in it. You can also make it vegetarian, which I have done many times before, by simply removing the chicken. Also, you can make it as spicy or mild as you like, as with pretty much all my recipes, this is child…

    Carrot & Sweet Potato Cakes

I’ve decided this month I’m going to go as gluten free as I can to see if it helps my stomach at all. My niece has Coeliac disease and it’s supposed to run in the family, I’ve had stomach upsets for years but I always put it down to a bad diet, it’s been a lot better since I changed my diet 2 years ago but I still get the odd flare up and it’s usually when I’ve had pizza or pasta. I do get bloated quite a lot too so even though I know I’m not coeliac, I think I’m definitely sensitive to gluten. I made these potato cakes…

    Easy Peasy Spaghetti Bolognese

Spaghetti Bolognese is a family classic and everyone has their own way of doing it. I love mine filled with veg and because it’s chopped up quite small even the toddler eats it without much fuss. I have mine with gluten free pasta and the Bolognese is naturally gluten free. I enjoy having it with courgetti (spiralised courgette) that’s been stir fried for a couple of minutes if I don’t fancy stodgy pasta too.

    Slow Cooker Herby Chicken

Slow Cooker Herby Chicken was a complete experiment that turned out to be one of those much loved recipes! I love my slow cooker and not just during the winter. I decided to have a look through my recipe books to create some new recipes to do in it. This is quite simple but really tasty and makes life so much easier on the days I have work. All I need to do is cook some pasta and serve it up. You could have it with anything though as it’s almost a casserole type dish.

    Cottage Pie

A classic winter warmer, you just can’t beat proper comfort food. This takes me back to being a child as it was one of my mum’s favourite, easy meals. My recipe is slightly different to my mum’s one but the basics are the same.

    Chunky Vegetable Soup

The weather has turned, the days are shorter and it’s definitely feeling like winter already! That can only mean one thing, it’s soup season!!! There’s nothing better than a bowl of soup on a crappy day and my favourite has always been a tomato based, vegetable one so here’s my Chunky Vegetable creation. You can use any vegetables you fancy really so just see what’s in the cupboard! Root vegetables tend to work best but it’s all about trial and error.

    Banana Bars

This isn’t my usual kind of recipe as it’s a baby led weaning one. Most of my recipes are child friendly and don’t contain any nasties but these literally contain 2 ingredients so are perfect for little fingers.

    Feeding The Small Humans

Once upon a time, well, a couple of years ago, I would have said my then 8 year old was a fussy eater. She would only eat things in breadcrumbs or other plain and boring, beige food. She would eat spaghetti bolognese every so often but it would be pot luck if she ate either the pasta or the bolognese as she never seemed to like both parts at any one time.
