The Best Slow Cooker Beef Casserole

Now, I’ve called it The Best Slow Cooker Beef Stew but this would be controversial in my family. My Mum makes a different version that has been the favourite for years but I decided to veer off from the family recipe and make my own. To be fair, they are completely different recipes. They share a couple of similar ingredients but the taste is completely different. Another reason I call it The Best, is because of one of the ingredients. You HAVE to use Bisto Best beef gravy. It’s by far the best tasting “instant” gravy and it’s gluten free too! Just make sure you use a gluten free alternative…

Spicy Tomato, Pepper & Chorizo Soup

This week I have been absolutely full of cold so soup was called for! I had some leftover spicy chorizo in the fridge from making my Paella so figured I could use it in a soup. I wanted something that could clear my nose. I don’t know about you but when I have a blocked nose, I can’t taste a thing. This means I always fancy things that are really flavorful but not always that healthy. This soup is both though! The chorizo does bring it in at slightly higher calories but let’s face it, it’s still going to be less than a shop bought tin! And it’s far more…

    Healthier Lemon and Coriander Hummus

It’s probably the wrong time of the year to be making a new hummus recipe but I had some while I was away at the weekend and got a real taste for it again. I was on holiday though so keeping an eye on the calories I was consuming had gone out the window. This meant, I needed to make a lower calorie, low fat version of course! I can guarantee I will keep tweaking this recipe as I always do. I thought I’d share it though as this makes such a tasty lunch or snack! You will need a blender of some description to make this. Ingredients 1 Tin…

Soup is definitely the ideal food for this time of the year and you can find a couple of recipes for different ones here and here. My croutons have been made with gluten free bread and the soup is naturally gluten free! If you are on a diet plan then this is a perfect recipe for you too!` You will need a hand blender or food processor for this Carrot and Coriander Soup recipe. Ingredients for the Carrot and…

    Fajita Chicken – 2 Ways

We have a thing for Mexican in our house. Well, apart from the toddler but he’s in the “I don’t like it!” stage. We don’t tend to have roasts on a Sunday, we either have Mexican or a curry. It’s kind of a picky dinner night where things get put in the table and you help yourself. Standard wraps in the UK are made from wheat flour which is annoying for me. Proper Mexican tortilla’s are made from corn which makes them naturally Gluten Free! Can you tell it annoys me slightly? Hehe! So anyway, because of this I couldn’t be bothered to buy GF wraps. I decided I would…

    Taco Mince

I got asked for my Taco Mince recipe a few times after I posted my dinner on Instagram last week. I don’t make my taco filling overly spicy as the kids both eat it so this is a family friendly recipe… As if I’d do anything but! The toddler has pasta with his though because, well, toddler. It does have a slight kick but it’s definitely not the spiciest thing I cook. This makes enough to fill 12 taco shells so plenty for the whole family. I usually serve mine with some rice too, just to make sure everyone is full. If you want to make this the most amazing…

    Easy Classic Flapjack

Classic Flapjack has always been one of my favourite cakes and one of the only things I have ever been able to bake without completely ruining it (baking is not my forte). This is actually my mum’s recipe that I’ve adapted slightly but I do still make it her way too. The only difference is I use honey and she uses golden syrup but they don’t really taste any different. I used blueberries in my latest batch as I had some wrinkly ones in my fridge to use up but you could leave them out or use different fruit. I’ll keep the recipe simple and do it for plain flapjack…

5 Healthy Lunches You Need To Have This Week

This is a bit of a recap post; looking back at some of my favourite, healthy lunches that are perfect  for taking to work! Just make sure you write your name on your lunchbox so no one can use that excuse when they steal it from the staffroom fridge. These recipes are best made the night before and some do keep for a few days so actually, they’ll last for more than one lunchtime. We’ll start with my absolute favourite and the one I personally make for lunch (and snacks) the most often. Curry Loaf This is so unbelievably easy to make as long as you find the right ingredients.…

    Katsu Curry

I’ve been meaning to make my own Katsu Curry sauce for ages! I have had Katsu since being gluten free but it was a shop bought one from Tesco. Don’t get me wrong, it was beautiful but at £3 for 1 meal it’s a bit on the expensive side! This version works out really cheap in comparison and it served 2 adults and a toddler. A toddler who I never expected to touch his dinner, especially not the sauce. But he did, and had extra sauce! I was more than happy to share mine with him given it’s vegetable based! I make mine gluten free by using gluten free bread…

    Creamy Chicken Pasta

I normally try making recipes at least twice before I post them on my blog but I had quite a few requests on all my social media accounts for this Creamy Chicken Pasta. It was quite simple to make and it came out really well so there’s no point holding out to make it a second time. Everyone in my house thouroughly enjoyed this and it’s definitely going to be something I make regularly as it’s not much effort to make which is right up my street these days! This does require a slow cooker but it’s not a recipe you can leave all day as it doesn’t take long…
