    Healthy Doner Kebab

Healthy Doner Kebab – Not really words you tend to hear together. But it is possible! I used to quite enjoy a dirty doner after a night out but the diet life put a stop to that… Shortly followed by the Gluten Free life. You just can’t guarantee what’s in one of those huge, rotary lamb slabs. But I’m guessing it’s about 95% fat and the rest is probably breadcrumbs. Even if I could eat gluten, the amount of fat dripping from them now puts me off anyway. I’m just not a fan of proper greasy food any more. It always made me feel rubbish and I refuse to let…

    Chicken Mayonnaise Pasta Salad

Summer is nearly upon us again… Well it should be but the weather has still been a bit naff! I’m sure this time last year I had the start of a golden tan. But anyway, summer means salads for me. There’s nothing better than nice crisp vegetables when it’s warm out. My only issue is, salad alone just doesn’t fill me up. Which is why I love this Chicken Mayonnaise Pasta Salad. It’s a good mix of stodgy carbs and tasty veggies. I tend to have it with some crispy lettuce leaves too. Mine is made with gluten free pasta but you can make it with normal stuff. Due to…

Overnight Cake In A Jar – Toffee Apple

Overnight Cake In a Jar is a different take on Overnight Oats. If you don’t know what overnight oats are then, you have clearly never dieted! The idea is to layer oats, yoghurt and fruit (fresh or frozen) and leave it in the fridge overnight. I have never layered mine though as the oats are usually still chewy. I’m a mix and top kinda gal. Overnight Cake In A Jar is the same concept but with a slight twist. It doesn’t use oats and you can layer it without worrying about chewy oats. As you may be aware, I am gluten free so I have to be careful with cereals.…

Screaming Chimp – Review & Chimpin Burger Recipe

Screaming Chimp kindly gifted a variety of their chilli sauces for me to try and review. All thoughts regarding the product are mine and not that of Screaming Chimp. Now that’s out of the way, let’s talk chilli sauce! I love a bit of spice when it comes to food. Unfortunately, I’m the only one in my house that does though. When I was asked if I wanted to try Screaming Chimps sauce, I couldn’t say no. Especially with a name like that! I did ask to try the more mild sauces though so I could include them in my family dinners. They arrived on a perfect day: Chicken burger…

Chicken, Bacon and Leek Pot Pie

Pie is ultimate comfort food in my eyes. There’s just something about it that reminds me of wintery, cold evenings. Since I began eating healthy 3 years ago, I’ve not often had pie as having pastry is just unheard of! How many calories?! And then, since finding out I have an issue with Gluten last year, I’ve had 1 pie. And I will say, it was the worst thing I’ve ever eaten. Because of this dreadful experience and sticking with healthy eating, I decided to make my own recipe. This chicken, bacon and leek pot pie seemed like a good one! Full of plenty of veggies and actually quite easy…

Roasted Sweet Red Pepper And Tomato Risotto

I love a rice dish! They’re perfect for any time of the year and always guaranteed to fill a hungry tummy. This particular recipe is vegan, gluten free and dairy free but doesn’t compromise on taste whatsoever! I’m not even vegetarian but I would like to try a few more veggie/vegan recipes this year. I really enjoy a good veg based meal so there’s no reason to have meat every day. It also reduces calories so win win really! Risotto is one of my favourite rice dishes and speaking of meat, you can find my chicken and bacon risotto recipe here. Ingredients (Serves a family of 4) 2 large sweet,…

    Pasta Amatriciana

I love a good pasta dish! I’ve started getting a little bored of eating the same ones though so it was time to come up with a new recipe! Amatriciana is so simple. It’s just a spicy tomato and bacon sauce but it tastes amazing! It is diet plan friendly and can be made gluten free by using the right pasta and a gluten free worcester sauce. Ingredients (serves 4) 1 onion 3 rashers of smoked bacon 1 tin of chopped tomatoes Half a tsp of garlic 2 tbsp of tomato puree 2 tsp of mild chilli powder Dried chilli flakes to taste 200ml of water 1tsp sweetener 1 tbsp…

The Best Slow Cooker Beef Casserole

Now, I’ve called it The Best Slow Cooker Beef Stew but this would be controversial in my family. My Mum makes a different version that has been the favourite for years but I decided to veer off from the family recipe and make my own. To be fair, they are completely different recipes. They share a couple of similar ingredients but the taste is completely different. Another reason I call it The Best, is because of one of the ingredients. You HAVE to use Bisto Best beef gravy. It’s by far the best tasting “instant” gravy and it’s gluten free too! Just make sure you use a gluten free alternative…

Spicy Tomato, Pepper & Chorizo Soup

This week I have been absolutely full of cold so soup was called for! I had some leftover spicy chorizo in the fridge from making my Paella so figured I could use it in a soup. I wanted something that could clear my nose. I don’t know about you but when I have a blocked nose, I can’t taste a thing. This means I always fancy things that are really flavorful but not always that healthy. This soup is both though! The chorizo does bring it in at slightly higher calories but let’s face it, it’s still going to be less than a shop bought tin! And it’s far more…
