    No Spend January – The Big Plan

    Happy New Year! It’s the time of year where everyone sets their goals for the coming year. I don’t set resolutions as they’re pretty much guaranteed to fail. I don’t want to put pressure on myself to lose weight or stick to a fitness plan. Mr and I have decided to have a “No Spend January” though.     Chicken, Bacon and Leek Pot Pie

    Pie is ultimate comfort food in my eyes. There’s just something about it that reminds me of wintery, cold evenings. Since I began eating healthy 3 years ago, I’ve not often had pie as having pastry is just unheard of! How many calories?! And then, since finding out I have an issue with Gluten last year, I’ve had 1 pie. And I will say, it was the worst thing I’ve ever eaten.     Chunky Vegetable Soup

    The weather has turned, the days are shorter and it’s definitely feeling like winter already! That can only mean one thing, it’s soup season!!! There’s nothing better than a bowl of soup on a crappy day and my favourite has always been a tomato based, vegetable one so here’s my Chunky Vegetable creation. You can use any vegetables you fancy really so just see what’s in the cupboard! Root vegetables tend to work best but it’s all about trial and error.
