Cherry Chocolate Cupcakes

Everybody loves cake, I personally don’t think you will ever find an amazing replacement for the real thing unless you go for mini cakes but you can easily eat a whole packet in one sitting (well I can). I have found a filling replacement in the form of Scan Bran again. I have done a chocolate cake recipe before but this is slightly different and it makes 6 of these full size cupcakes. They are so filling that you won’t want to eat more than 1 or 2 in one go anyway!

Ingredients

  • 5 slices of GG Crispbread Scan Bran
  • 3 Tbsp of sweetener
  • 2 tsp of Choc Shot
  • 1 cherry flavour Danone Light and Free yoghurt
  • 2 eggs
  • Half a tub of quark
  • 1 sachet of Options hot chocolate (I used Praline)

Method (makes 6)

Soak the scan bran in splashes of boiling water in a bowl, I gently add a bit at a time just making sure every bit of the slices gets a bit of water on it then leave it till it goes soft and mushes easily. When softened, mush it up with a fork, add more water if needed. Add 2 Tbsp of sweetener and mix well then add the yoghurt and Choc Shot then mix again. Whisk 2 eggs then add them to the Scan Bran mixture and give it another mix, making sure the egg is evenly distributed. Separate the mixture into 6 silicone cupcake cases and pop into a preheated oven at 180° for 30 minutes.

While they’re cooking, make up the “icing”. Pop half a tub of quark into a separate bowl, add 1 tbsp of sweetener and the sachet of Options and mix well. Once the cakes have cooked and cooled a bit, add a teaspoon of the chocolate quark to the top of them or you could pipe it on but I have no skills when it comes to that!
