Roasted Red Pepper Hummus
Roasted Red Pepper Hummus was a little bit of an experiment. I love when my experiments go right though! I’ve never been much of a hummus fan but I decided to give this a go so I’ve got something a bit different for lunch. Now it’s got me thinking about summer picnics down the beach. This is the only way I will ever eat celery. I can’t stand it on it’s own usually! Shop bought hummus can be quite high in fat so this is a healthier alternative. Roasted Red Pepper Hummus is a little bit thicker but still tastes amazing. It also doesn’t take too long to make, as…

New Year, New…. Nothing
I have decided that this year I won’t be making any resolutions, I won’t be working on a new me and I certainly won’t be taking out a gym membership!

Slow Cooker Pepperpot Stew
I love a slow cooker meal, and Pepperpot Stew is definitely one of my favourites. Slow cookers are just so handy for busy days and you can make perfect wintery stews. This particular stew is full of flavour but with a slight kick. The kids enjoy it too so it shows it’s not too spicy. You can make this with beef or pork, both taste great but I prefer pork.

Smokey Bacon and Chickpea Soup
Winter is definitely here and for me that means it’s soup weather! I love my chunky vegetable soup but I’m getting a little bored of it so today I decided to try something new and this is what I came up with. Smokey Bacon and Chickpea Soup tastes amazing and it’s perfect for warming you up from the inside. There’s a real smoked flavour to it and the chickpeas give it some real filling power. Ingredients 4 rashers of smoked bacon, fat removed and cut into small chunks 2 tins chopped tomatoes 1 tin of chickpeas 1 litre vegetable stock 1 medium onion, diced 1 tbsp of smoked paprika 1/2…

Cherry Chocolate Cupcakes
Everybody loves cake, I personally don’t think you will ever find an amazing replacement for the real thing unless you go for mini cakes but you can easily eat a whole packet in one sitting (well I can). I have found a filling replacement in the form of Scan Bran again. I have done a chocolate cake recipe before but this is slightly different and it makes 6 of these full size cupcakes. They are so filling that you won’t want to eat more than 1 or 2 in one go anyway!

Lemon Drizzle Baked Oats
Lemon Drizzle Baked Oats are another combination that I love! Another day, another baked oats recipe. I have so many different combinations for these now but I only share the best ones. I always make them a couple of times before I post just to ensure they’re good! What are your favourite combinations? If Lemon Drizzle Baked Oats don’t quite take your fancy why not try Melt In The Middle Baked Oats or Caramel Apple Baked Oats
