Jar Noodles
This was a slightly experimental lunch but it turned out to be a success! Which is always a bonus. I love a Pot Noodle style thing but this is a great way of getting more vegetables in your system. Also, it’s more filling than a shop bought one as it contains actual protein! I have recently adapted this recipe as I wrote it pre-gluten free. I use dried Rice Noodles instead of egg ones and a gluten free alternative to soy sauce.

Roasted Red Pepper Hummus
Roasted Red Pepper Hummus was a little bit of an experiment. I love when my experiments go right though! I’ve never been much of a hummus fan but I decided to give this a go so I’ve got something a bit different for lunch. Now it’s got me thinking about summer picnics down the beach. Cherry Chocolate Cupcakes
Everybody loves cake, I personally don’t think you will ever find an amazing replacement for the real thing unless you go for mini cakes but you can easily eat a whole packet in one sitting (well I can). I have found a filling replacement in the form of Scan Bran again. I have done a chocolate cake recipe before but this is slightly different and it makes 6 of these full size cupcakes. They are so filling that you won’t want to eat more than 1 or 2 in one go anyway!

Curry Loaf
Curry Loaf is by far one of the best things I make! Even if I do say so myself. It’s so simple, only uses a few ingredients and it makes enough to last all week. I have mine with salad for lunch or just on its own as a snack when I’m feeling peckish. To make this gluten free you have to check the ingredients. It’s mainly always the rice that you need to check. I used to use the cheapest possible one I could find. Unfortunately, they contain wheat so do be careful.

Banana Bars
This isn’t my usual kind of recipe as Banana Bars is actually a baby led weaning one. Most of my recipes are child friendly and don’t contain any nasties but these literally contain 2 ingredients and are perfect for little fingers. I’ve made them for my friend’s children too and they’ve all really enjoyed them. Most adults are not a fan as they’re not sweet enough for them but little ones love them. Homemade Scotch Eggs
Homemade Scotch Eggs make a great lunchbox filler and are definitely one of my favourite lunches! Mr takes them to work and his colleagues always comment on how good they look. They’re also great for picnics along with mini quiches! They do take a bit of practice but they’re easier to make than I ever thought! If I can do it then anyone can. I try to keep the egg on the soft side as I love having a gooey middle! You can easily make these gluten free by using the right ingredients too. Always check your sausages as many aren’t gluten free!
