    Bacon, Leek & Potato Soup

I do love soup! There’s just something so warming about it. When the weather is miserable and cold soup is just the perfect meal. This one is perfect for those grey, rainy days and is really filling thanks to the potato. It’s also a good way of using up some sad looking potatoes lurking in the cupboard.

    Victoria Sponge (well not quite)

Scan Bran….. You either love it or hate it and I must say, I quite like it! Now, please don’t expect this to be like a proper Victoria sponge because it’s not but as far as low calorie cakes go, this is a decent one! Scan Bran makes quite a squidgy cake but it’s heavy, not light and fluffy like a proper sponge. I had half a cake as breakfast and could barely eat lunch which is not like me!

    Roasted Red Pepper Hummus

I’ve never been much of a hummus fan but I decided to give this a go so I’ve got something a bit different for lunch and now it’s got me thinking about summer picnics down the beach. Shop bought hummus can be quite high in fat so this is a healthier alternative. It also doesn’t take too long to make, as long as you have a food processor of course!

    Slow Cooker Pepperpot Stew

I love a slow cooker meal, and Pepperpot Stew is definitely one of my favourites. Slow cookers are just so handy for busy days and you can make perfect wintery stews. This particular stew is full of flavour but with a slight kick. The kids enjoy it too so it shows it’s not too spicy. You can make this with beef or pork, both taste great but I prefer pork.

    Smokey Bacon and Chickpea Soup

Winter is definitely here and for me that means it’s soup weather! I love my chunky vegetable soup but I’m getting a little bored of it so today I decided to try something new and this is what I came up with. It tastes amazing and it’s perfect for warming you up from the inside. Ingredients 4 rashers of smoked bacon, fat removed and cut into small chunks 2 tins chopped tomatoes 1 tin of chickpeas 1 litre vegetable stock 1 medium onion, diced 1 tbsp of smoked paprika 1/2 tsp of chilli flakes 1 tsp of garlic powder 2 tsp of worcestershire sauce 2 tbsp of tomato puree Method…

    30 Day Yoga Challenge Results

As you may have seen from Instagram and/or previous blog posts I challenged myself to do a 30 Day Yoga course that I found on YouTube. Well tonight, I completed it. It did take me slightly longer than 30 days because I have had to miss the odd day due to not having time to fit it in (usually weigh in night) but I always picked it up again the next day.

    Easy Peasy Spaghetti Bolognese

Spaghetti Bolognese is a family classic and everyone has their own way of doing it. I love mine filled with veg and because it’s chopped up quite small even the toddler eats it without much fuss. I have mine with gluten free pasta and the Bolognese is naturally gluten free. I enjoy having it with courgetti (spiralised courgette) that’s been stir fried for a couple of minutes if I don’t fancy stodgy pasta too.

    Caramel Apple Baked Oats

I’ve said it once, I’ll say it a million times, I love baked oats! I decided to go seasonal with them today as it is caramel apple season! I forgot how much I liked cooked apple too, there’s something really homely about it and it just reminds me of apple pie. These were so tasty and a nice way to sneak a bit of fruit in first thing. If you are making these gluten free then please remember to use gluten free oats, I really don’t want to make people ill!   Ingredients 40g Oats 3/4 of a Muller Light smooth caramel yoghurt 2 tbsp of sweetener 1 egg 25g…
