Recipes
My recipes are the reason my blog started in the first place. My idea was to have them all in one place and available 24/7. I spent a lot of time retyping them and this was to save my fingers. All of my meals have been approved by my family and most are suitable for everyone. They can also be easily adapted for allergies. I started this blog as a Slimming Worlder so almost everything is diet friendly. You don't have to be a chef in order to cook any of these meals, I'm definitely not so I've tried to make them as simple as possible.

Slow Cooker Pork Casserole
We’ve had crappy weather here lately so a bit of comfort food was definitely needed tonight. There’s nothing better than a veggie filled, Slow Cooker Pork casserole! Any slow cooker meal is the ultimate comfort food in my eyes. A casserole is no exception to that rule. To me, this slow cooker pork casserole is winter in a bowl. I have a few favourite slow cooker meals but another good one for winter is this Pepperpot Stew. There’s just something so warming about a slow cooker meal. It also makes life so much easier too.

Meatloaf Muffins
These were a bit of an experiment as I’ve not made Meatloaf for many years and I don’t have good memories of it growing up, it was always dry and just hard to swallow (literally). I figured that doing them as muffins would be easier to serve but I didn’t quite consider the meat juice issue….

Epic Bacon Cheeseburger – Better Than A Takeaway!
My Epic Bacon Cheeseburger is one of my favourite Fakeaways. I do a couple of different burgers with different fillings but the main burger meat is always the same and it tastes amazing! My toddler eats pretty much everything we eat so none of my recipes have salt added to them, I don’t feel they need it but add away if you do. My Epic burger is of course a double but you can make the burgers and freeze them for another day. I done this recently and it saved so much time when I was in a hurry!

Veggie Pasta
My Veggie Pasta is a recipe I get asked for quite a lot on Instagram. To be completely honest, it is thrown together out out whatever I have in the cupboards and fridge and it changes every time I make it. Tonight though, I tried to take notice of what went in but it is so versatile that you can make it with whatever you have to hand. Chinese Fakeaway Satay Chicken With Peanut Sauce
Chinese Fakeaway Satay Chicken has got to be one of the greatest discoveries I have made when it comes to healthy food. It all started when we had friends over for dinner and made I a low fat Chinese feast! This was just one of the dishes but it’s now become one of our favourite meals. You can serve it with whatever you fancy but egg fried rice is pretty easy to make. I now make this gluten free by using Tamari instead of soy sauce. Mini Crustless Quiches
I love these mini quiches as an easy, batch cooked, take to work lunch. They’re gluten free, low fat and really tasty! The recipe makes 12 so they last a couple of days in the fridge and they’re a great way of using up some of the wrinkly veg you may have lying around. I don’t like cottage cheese on its own so please don’t be put off if you’re like me in that sense, honestly, you won’t be able to tell once they’re cooked!

Melt In The Middle Baked Oats
Baked oats have got to be one of my favourite breakfasts. I ate them a bit too often at one point and got a bit sick of them but after a short break, I’m now loving them again. They’re not a breakfast you can make if you’re in a rush as they take a while to cook but you can always make them the night before. They’re so versatile, you can experiment with different flavour combinations by simply changing the flavour of the yoghurt or other fillings. Fanta Chicken
Definitely a favourite in my house is Fanta Chicken. I only used to do this when Mr and I were eating but we’ve since found out that the kids will eat it too. Which is a big thing with the toddler at the moment! It’s a great way of getting extra vegetables into him too! It is an almost Sweet and Sour tasting dish but without the ton of sugar that the real thing contains! It’s such a tasty dish and I easily make mine gluten free by swapping the soy and worcester sauce for gluten free alternatives. Fanta Chicken is also naturally dairy free.
