Slow Cooker Herby Chicken
Slow Cooker Herby Chicken was a complete experiment that turned out to be one of those much loved recipes! I love my slow cooker and not just during the winter. I decided to have a look through my recipe books to create some new recipes to do in it. This is quite simple but really tasty and makes life so much easier on the days I have work. All I need to do is cook some pasta and serve it up. You could have it with anything though as it’s almost a casserole type dish.

Curry Loaf
Curry Loaf is by far one of the best things I make! Even if I do say so myself. It’s so simple, only uses a few ingredients and it makes enough to last all week. I have mine with salad for lunch or just on its own as a snack when I’m feeling peckish. To make this gluten free you have to check the ingredients. It’s mainly always the rice that you need to check. I used to use the cheapest possible one I could find. Unfortunately, they contain wheat so do be careful.

Chunky Vegetable Soup
The weather has turned, the days are shorter and it’s definitely feeling like winter already! That can only mean one thing, it’s soup season!!! There’s nothing better than a bowl of soup on a crappy day and my favourite has always been a tomato based, vegetable one so here’s my Chunky Vegetable Soup creation. You can use any vegetables you fancy really so just see what’s in the cupboard! Root vegetables tend to work best but it’s all about trial and error. I find the Chunky Vegetable Soup is really filling. It keeps me going for the whole afternoon and it’s super healthy too!

Chicken and Chorizo Paella
Chicken and chorizo paella is such a tasty dish and because it’s all done in one pan it means less washing up! I feel like this is the perfect dish for any time of the year. It’s great in the summer as it just reminds me of Spain but it’s also warming in the winter. The cold leftovers also taste amazing! Not that there’s ever much left over in our house!

Chinese Noodle Salad
Chinese Noodle Salad is one of my favourite lunches as it doesn’t take much prep and tastes delicious. It’s great with loads of lettuce and will keep you full all afternoon. It can easily be taken out and about in a lunchbox so makes the perfect midweek lunch when you’re off to work. I make mine gluten free by using rice noodles and Tamari these days. It works just as well as it did with egg noodles pre-GF. Of course, you can make it with the normie ingredients if you don’t need it to be free from.

Easy Chicken Curry with Pilau Rice
This easy chicken curry is a firm favourite in my house and you can make it as spicy (or not) as you like. I don’t make mine overly spicy as both kiddies eat it and Mr isn’t great with heat. No matter how you have it, this is still full of flavour. But then, is a curry ever boring? I don’t ever change this recipe but you could always add some chickpeas if you wanted to bulk it out a little more. If you can, make it so there’s a portion left over. McDonald’s Style Egg In A Cup
This McDonald’s style egg in a cup trick is probably the easiest and quickest way to cook an egg! It looks like a Maccy D’s breakfast muffin egg but it is far healthier and tastes better too (in my opinion anyway). This has become a breakfast staple in our house just because they are so quick. They make the perfect weekend breakfast. I have recently found you can purchase a microwave egg poacher that does the same thing. It’s probably more faff than doing it this way though. Eggy Breakfast Muffins
Eggy Breakfast Muffins are great for so many reasons! They are so simple to make and they are great for using up leftover veg and old eggs. You can put anything you want in them and eat them hot or cold so great for days when you need something quick. As long as you made them the night before that is. They’re naturally Gluten Free and pretty filling. They’re basically just mini omelettes, muffin style! You can of course make them dairy free by using an alternative milk and vegetarian too. Low Fat Chilli Con Carne Two Ways
This Low Fat Chilli is loved by everyone in my house and it’s such a good way of using up slightly wrinkly vegetables that are lurking in the fridge! There’s usually some leftover too which means quick meals for little man or a chilli con carne jacket potato one lunch time for me. We recently used the leftovers to make chilli dogs, which were amazing! I don’t make mine spicy as the kids eat it this way. If you wanted more of a kick then some dried chilli flakes will do it! I tend to add them to the leftovers if it’s just me that’s going to eat it!

Homemade Scotch Eggs
Homemade Scotch Eggs make a great lunchbox filler and are definitely one of my favourite lunches! Mr takes them to work and his colleagues always comment on how good they look. They’re also great for picnics along with mini quiches! They do take a bit of practice but they’re easier to make than I ever thought! If I can do it then anyone can. I try to keep the egg on the soft side as I love having a gooey middle! You can easily make these gluten free by using the right ingredients too. Always check your sausages as many aren’t gluten free!
