Chicken and Chorizo Paella
Chicken and chorizo paella is such a tasty dish and because it’s all done in one pan it means less washing up! I feel like this is the perfect dish for any time of the year. It’s great in the summer as it just reminds me of Spain but it’s also warming in the winter. The cold leftovers also taste amazing! Not that there’s ever much left over in our house!

Banana Bars
This isn’t my usual kind of recipe as Banana Bars is actually a baby led weaning one. Most of my recipes are child friendly and don’t contain any nasties but these literally contain 2 ingredients and are perfect for little fingers. I’ve made them for my friend’s children too and they’ve all really enjoyed them. Most adults are not a fan as they’re not sweet enough for them but little ones love them. The natural sugar from the banana is just enough for them and go down a treat. You can always add dried fruit too if you wanted to mix it up a little. Or if you are being…

Chinese Noodle Salad
Chinese Noodle Salad is one of my favourite lunches as it doesn’t take much prep and tastes delicious. It’s great with loads of lettuce and will keep you full all afternoon. It can easily be taken out and about in a lunchbox so makes the perfect midweek lunch when you’re off to work. I make mine gluten free by using rice noodles and Tamari these days. It works just as well as it did with egg noodles pre-GF. Of course, you can make it with the normie ingredients if you don’t need it to be free from.

Vanilla and Toasted Marshmallow Baked Oats
Baked oats were my staple breakfast once upon a time. They always taste pretty good with whatever combination you come up with. This Vanilla & Toasted Marshmallow recipe is a pretty simple one. It tastes great though! Nothing can beat toasted marshmallows for breakfast though. You can find another couple of variations of Baked Oats by clicking HERE or HERE. I use gluten free oats for mine but you can use any you have in the cupboard if you don’t have to worry about intolerance’s.

Easy Chicken Curry with Pilau Rice
This easy chicken curry is a firm favourite in my house and you can make it as spicy (or not) as you like. I don’t make mine overly spicy as both kiddies eat it and Mr isn’t great with heat. No matter how you have it, this is still full of flavour. But then, is a curry ever boring? I don’t ever change this recipe but you could always add some chickpeas if you wanted to bulk it out a little more. If you can, make it so there’s a portion left over. Trust me, this tastes even better as leftovers! Popped on top of a jacket potato is my…

McDonald’s Style Egg In A Cup
This McDonald’s style egg in a cup trick is probably the easiest and quickest way to cook an egg! It looks like a Maccy D’s breakfast muffin egg but it is far healthier and tastes better too (in my opinion anyway). This has become a breakfast staple in our house just because they are so quick. They make the perfect weekend breakfast. I have recently found you can purchase a microwave egg poacher that does the same thing. It’s probably more faff than doing it this way though. Even though it cooks two eggs at a time they don’t cook evenly. Also, getting them out of the pot is more…

Eggy Breakfast Muffins
Eggy Breakfast Muffins are great for so many reasons! They are so simple to make and they are great for using up leftover veg and old eggs. You can put anything you want in them and eat them hot or cold so great for days when you need something quick. As long as you made them the night before that is. They’re naturally Gluten Free and pretty filling. They’re basically just mini omelettes, muffin style! You can of course make them dairy free by using an alternative milk and vegetarian too. This recipe makes 6 muffins so I usually have 3 at a time. That seems like a reasonable portion…

Chocolate Orange Baked Oats
Baked oats are so versatile, you can make them any flavour by simply changing the yoghurt and what you put in it. I’ve tried loads in my time but these are one of my favourites.

Chicken, Bacon and Mushroom Risotto
Chicken, bacon and mushroom risotto has got to be one of my favourite meals! It tastes amazing and warms you through on a cold evening. Though it is slightly time consuming as you can’t leave it. But it is so worht the effort. Little man was not a fan the 1st time he tried it but since then he has grown to love it too. I just have to spend time picking out the mushrooms and peas! As you do to get kids to eat anything. Rice dishes are always my favourite meals and you can find another great recipe here. I just find these one pan meals so much…

Low Fat Chilli Con Carne Two Ways
This Low Fat Chilli is loved by everyone in my house and it’s such a good way of using up slightly wrinkly vegetables that are lurking in the fridge! There’s usually some leftover too which means quick meals for little man or a chilli con carne jacket potato one lunch time for me. We recently used the leftovers to make chilli dogs, which were amazing! I don’t make mine spicy as the kids eat it this way. If you wanted more of a kick then some dried chilli flakes will do it! I tend to add them to the leftovers if it’s just me that’s going to eat it!
