Mini Egg Cookie Bar – An Easter Treat
I’ve been meaning to write up a Cookie Bar recipe for ages. It’s based on one of my older recipes and I’ve actually made a few now! This means I know the recipe works and it works well. I decided to give it an Easter twist by making a Mini Egg Cookie Bar. So as I said, this is based on one of my older recipes. The Thumb Print Biscuits to be exact. The base biscuit is vegan friendly if you use the right margarine. So you can easily switch out the Mini Eggs for a vegan alternative if needed. My version is of course Gluten Free too. Not that…

Roasted Herby Chicken With Sundried Tomato Pasta
We love a good pasta dish in our house. Mainly because it’s one of the only things the toddler will eat. I’m always trying out different flavour combinations but I don’t always remember to write them down. This Roasted Herby Chicken With Sundried Tomato Pasta I did! This recipe came about as I was trying to use up some Sundried Tomatoes that I had in my fridge. A lot of my recipes come about from me trying to use up leftovers. It’s not crazy if it works! I just love being experimental in the kitchen which is a far throw from what I used to be like! My idea of…

Healthy Doner Kebab
Healthy Doner Kebab – Not really words you tend to hear together. But it is possible! I used to quite enjoy a dirty doner after a night out but the diet life put a stop to that… Shortly followed by the Gluten Free life. You just can’t guarantee what’s in one of those huge, rotary lamb slabs. But I’m guessing it’s about 95% fat and the rest is probably breadcrumbs. Even if I could eat gluten, the amount of fat dripping from them now puts me off anyway. I’m just not a fan of proper greasy food any more. It always made me feel rubbish and I refuse to let…

Chicken Mayonnaise Pasta Salad
Summer is nearly upon us again… Well it should be but the weather has still been a bit naff! I’m sure this time last year I had the start of a golden tan. But anyway, summer means salads for me. There’s nothing better than nice crisp vegetables when it’s warm out. My only issue is, salad alone just doesn’t fill me up. Which is why I love this Chicken Mayonnaise Pasta Salad. It’s a good mix of stodgy carbs and tasty veggies. I tend to have it with some crispy lettuce leaves too. Mine is made with gluten free pasta but you can make it with normal stuff. Due to…

Chicken, Bacon and Leek Pot Pie
Pie is ultimate comfort food in my eyes. There’s just something about it that reminds me of wintery, cold evenings. Since I began eating healthy 3 years ago, I’ve not often had pie as having pastry is just unheard of! How many calories?! And then, since finding out I have an issue with Gluten last year, I’ve had 1 pie. And I will say, it was the worst thing I’ve ever eaten. Because of this dreadful experience and sticking with healthy eating, I decided to make my own recipe. This chicken, bacon and leek pot pie seemed like a good one! Full of plenty of veggies and actually quite easy…

Roasted Sweet Red Pepper And Tomato Risotto
I love a rice dish! They’re perfect for any time of the year and always guaranteed to fill a hungry tummy. This particular recipe is vegan, gluten free and dairy free but doesn’t compromise on taste whatsoever! I’m not even vegetarian but I would like to try a few more veggie/vegan recipes this year. I really enjoy a good veg based meal so there’s no reason to have meat every day. It also reduces calories so win win really! Risotto is one of my favourite rice dishes and speaking of meat, you can find my chicken and bacon risotto recipe here. Ingredients (Serves a family of 4) 2 large sweet,…

Healthier Lemon and Coriander Hummus
It’s probably the wrong time of the year to be making a new hummus recipe but I had some while I was away at the weekend and got a real taste for it again. I was on holiday though so keeping an eye on the calories I was consuming had gone out the window. This meant, I needed to make a lower calorie, low fat version of course! I can guarantee I will keep tweaking this recipe as I always do. I thought I’d share it though as this makes such a tasty lunch or snack! You will need a blender of some description to make this. Ingredients 1 Tin…

Carrot And Coriander Soup With Crunchy Croutons
Soup weather is definitely upon us. It’s chilly outside, even when it’s sunny! All I want to do is wrap up on the sofa in a big jumper with a mug of something warm. Soup is definitely the ideal food for this time of the year and you can find a couple of recipes for different ones here and here. My croutons have been made with gluten free bread and the soup is naturally gluten free! If you are on a diet plan then this is a perfect recipe for you too!` You will need a hand blender or food processor for this Carrot and Coriander Soup recipe. Ingredients for the Carrot and…

Fajita Chicken – 2 Ways
We have a thing for Mexican in our house. Well, apart from the toddler but he’s in the “I don’t like it!” stage. We don’t tend to have roasts on a Sunday, we either have Mexican or a curry. It’s kind of a picky dinner night where things get put in the table and you help yourself. Standard wraps in the UK are made from wheat flour which is annoying for me. Proper Mexican tortilla’s are made from corn which makes them naturally Gluten Free! Can you tell it annoys me slightly? Hehe! So anyway, because of this I couldn’t be bothered to buy GF wraps. I decided I would…

Taco Mince
I got asked for my Taco Mince recipe a few times after I posted my dinner on Instagram last week. I don’t make my taco filling overly spicy as the kids both eat it so this is a family friendly recipe… As if I’d do anything but! The toddler has pasta with his though because, well, toddler. It does have a slight kick but it’s definitely not the spiciest thing I cook. This makes enough to fill 12 taco shells so plenty for the whole family. I usually serve mine with some rice too, just to make sure everyone is full. If you want to make this the most amazing…
