Low Fat Chilli Con Carne Two Ways
This Low Fat Chilli is loved by everyone in my house and it’s such a good way of using up slightly wrinkly vegetables that are lurking in the fridge! There’s usually some leftover too which means quick meals for little man or a chilli con carne jacket potato one lunch time for me. We recently used the leftovers to make chilli dogs, which were amazing! I don’t make mine spicy as the kids eat it this way. If you wanted more of a kick then some dried chilli flakes will do it! I tend to add them to the leftovers if it’s just me that’s going to eat it!

Homemade Scotch Eggs
Homemade Scotch Eggs make a great lunchbox filler and are definitely one of my favourite lunches! Mr takes them to work and his colleagues always comment on how good they look. They’re also great for picnics along with mini quiches! They do take a bit of practice but they’re easier to make than I ever thought! If I can do it then anyone can. I try to keep the egg on the soft side as I love having a gooey middle! You can easily make these gluten free by using the right ingredients too. Always check your sausages as many aren’t gluten free!

KFC Style Crispy Chicken
These KFC Style Crispy Chicken strips are a firm favourite in our house. They taste just as good as their greasy counterparts, if not better! Even the kids agree so they must be good! I do now make my KFC Style crispy chicken with gluten free bread. It means I can eat them without the stomach ache. Something I don’t think I’ll ever manage with the real KFC! French Toast Doughnuts
I had to wait for breakfast this morning as I was missing an essential part of my french toast doughnuts….. the bread! It was so worth the wait though as these are delicious! They’re definitely a healthier version of a doughnut but also a nicer way of doing French Toast! They’re also really simple to make. Of course, mine are now made gluten free using gluten free bread. I found the best non-gluten free bread is the Crustless one by Kingsmill. This also removes the first step for you! I have made chocolate French Toast Doughnuts but you can also do this with jam. Slow Cooker Pork Casserole
We’ve had crappy weather here lately so a bit of comfort food was definitely needed tonight. There’s nothing better than a veggie filled, Slow Cooker Pork casserole! Any slow cooker meal is the ultimate comfort food in my eyes. A casserole is no exception to that rule. To me, this slow cooker pork casserole is winter in a bowl. I have a few favourite slow cooker meals but another good one for winter is this Pepperpot Stew. There’s just something so warming about a slow cooker meal. It also makes life so much easier too.

Epic Bacon Cheeseburger – Better Than A Takeaway!
My Epic Bacon Cheeseburger is one of my favourite Fakeaways. I do a couple of different burgers with different fillings but the main burger meat is always the same and it tastes amazing! My toddler eats pretty much everything we eat so none of my recipes have salt added to them, I don’t feel they need it but add away if you do. My Epic burger is of course a double but you can make the burgers and freeze them for another day. I done this recently and it saved so much time when I was in a hurry!

Veggie Pasta
My Veggie Pasta is a recipe I get asked for quite a lot on Instagram. To be completely honest, it is thrown together out out whatever I have in the cupboards and fridge and it changes every time I make it. Tonight though, I tried to take notice of what went in but it is so versatile that you can make it with whatever you have to hand.
